Hello, just wanted some clarification as whether to use Fusion Optimization when fusing a dental scan?

I highly advise you to use fusion optimization no matter what object you are scanning. 
It adds some extra processing time but algorithm behind it does a great jobs optimizing the scan result.

The fusion optimization is especially great if your care more about edges and corners , it was created to deliver better geometric shapes, but you will always profit it when using it with your dental scans for the little extra precision.
